We start off by gathering around the central work table for some opening words, specific technique demonstrations as appropriate, and a description of that session’s activities. Then, depending on the particular class subject, we either remain around the work table and/or move about the kitchen to accomplish the various recipe tasks at hand. During this time we work together to keep the separate activities integrated and moving along. Questions and collective comments are addressed throughout. Everyone has the opportunity to learn the steps involved in every recipe scheduled for that day, and we analyze the possible variations they represent. These core recipes are offered as a guideline for understanding multi-purpose concepts that will apply to both your everyday and special occasion cooking.
